Caigen Xiang Restaurant is one of the popular restaurants in Chengdu. It has four outlets throughout Chengdu. Caigen Xiang Restaurant has a cooking school along with its eating outlet. The main cuisine that the restaurant serves is of Sichuan type. But Caigen Xiang Restaurant specializes in dishes made up with traditional pickled vegetables, which is popularly known as Pao Cai. Caigen Xiang Restaurant has achieved awards for its dish called Paojiao Moyu Zai. The dish is a preparation of pickled pepper with baby squid. There are other two typical dishes the restaurant serves. One is the Caigen Xiang spareribs or the Caigen Xiang Paigu. It is prepared by separating off the bone and is cooked in a delicious sauce that yields them their juicy and tender flavor. The other kind of dish is Paocai Jiayu,a distinctive feature of this restaurant. It is a dish made out of fish and pickled vegetables. A whole fish is served in a red sauce with varied types of fresh and pickled vegetables. You should be careful about dealing with the bones very minutely. Otherwise the fish is very delicate and good to taste.
